Egg salad can be served a variety of ways. Eggs have great taste and nutritious benefits. They make a very good choice for a salad. Your children will get all the nutritional benefits and great tasting food.

Ingredients for 4 servings:

2 hard-boiled eggs, chopped

¾ cup steamed and chopped cauliflower

¼ cup peeled and grated carrot

¼ cup chopped yellow onion

¼ cup chopped celery

2 teaspoons prepared yellow mustard

3 tablespoons mayonnaise

¹⁄8 teaspoon salt

¹⁄8 teaspoon ground black pepper

Just mix all the ingredients together in a medium bowl. Chill in the refrigerator for 15 minutes. Serve and eat.
